The five main factor will effect the meat products quality.


1)The Environment.
   The environment contain two side,frist is the environment temperature,,during the meat process , the temperature change have much relation with the meat products quality.the temperature high or low will effect the ground meat temperature ,the most importment ground meat temperature is the main element,the professional enginner knowing that well, the best way is using frozen meat or add water or ice pieces to keep the meat temperature during process.the  Homoiothermy of production department is better to keep temperature of ground meat and avoid Microbial breeding.although that will high the cost of production,it is worth to do for long time development,and it is also the development direction of food products.
   second is Environmental Health,the production envernment is also key to meat products quality,if the production department ,machine,tool is not clean and health,the products quality is also worse too.these series questions is highly focused by all parts now.

2)The change of raw meat and additive. 
   All raw material of meat and additive is need by all meat process factory,because of market competition and production cost,the factory need to change one or two times of supplier for meat and additive in one year.some times the meat will have big differ at the water content and fat content.while the manufacturing technique is not follow and changed in time,thus the quality of products will be low or have waste.
   Same name of additive,while his Effective content is differ,these all this reasons will effect the meat products,thus the quality will be low naturally.
